Quick and Easy Breakfast For a Cold Winter Morning

Nothing beats a hot breakfast before taking on the cold and hitting the icy roads. 

Here’s how I handle mornings like this and bypass the drive-thru window:

Patti’s Breakfast Sandwich

1 Egg
1 Slice of oven roasted low sodium turkey breast, diced
½ Slice of Sargento Natural Baby Swisscheese
1 half of whole wheat pita bread
1-3 tsp. Salsa

Beat the egg with a fork until white and yolk are well blended. Add the diced turkey breast and place in a shallow microwave safe dish lightly sprayed with non-stick cooking spray. Microwave on high for 1 minute and 30 seconds or until the egg is firmly set. Put egg inside pita half and top with cheese and salsa or other low-fat topping.
